These sandwiches are amazing! The ranch sauce works very well on the shredded chicken. The chunks of cheddar cheese add a nice boost of flavor to sandwich. My kids' favorite part would have to be the bacon!

1/2 pound bacon
1 lb shredded chicken
1/2 onion chopped
1 ranch seasoning packet
1 1/2 c milk
1 Tbs cornstarch
1 c shredded mozzarella
1 c chopped cheddar cheese
Your Favorite Rolls
Heat a large cast iron skillet or any large skillet on medium high heat.
Cook the bacon until crisp then remove the bacon to cool and drain. Save about 2 tsp of the bacon fat.
In the same skillet add bacon fat and the onion. Cook for 3-4 minutes or until onion are soft and translucent.
Whisk the ranch packet, milk and cornstarch together and add it to the pan, cooking until slightly thickened and bubbling (3 - 4 minutes). I add half the milk and cornstarch in a small resealable container to mix. This way I don't have lumps of cornstarch.
Add the shredded chicken and stir until the chicken in coated.
Add in the shredded mozzarella and stir to combine, chop the bacon and sprinkle it and the cheddar cheese on the mixture just before serving.
