Lemon Poppy Seed Cake


Years ago, I started making lemon poppy seed cake. It has grow to be a favorite in our house. I looked through recipe after recipe trying to find an easy Lemon Poppy Seed cake recipe. I wanted something easy that I could make with my kids or when we are busy. I couldn't find any. While I was at the store one day, I saw a lemon cake mix and figured I would give it a shot. I bought a box and a container of poppy seeds. When I got home I mixed together the cake mix according to the directions on the box. Dumped in some poppy seeds. What I made that day wasn't what I wanted, but it was close. The cake mix didn't have a enough of a lemon flavor. Plus it didn't have enough poppy seeds (100% my fault).

After several different alterations, I have came up with this recipe.

1 box of lemon cake mix (mix according to directions on box)
1 tsp of lemon extract
1 1/2 Tablespoon of poppy seeds


Mix cake mix according to directions. Add lemon extract and poppy seeds. Mix until all ingredients are combined. Pour batter into a greased cake pan.

Bake at 350 for 25-30 minutes depending on the pan you use.

I have made mini loaves, regular loaves, muffins, 9 by 13 cakes and bunt cakes with this recipe.

You can substitute lemon juice for the extract. I used a 1/4 of a cup of lemon juice as a substitute. The cake is a little moister but I don't always have lemons in my home so that's why I use lemon extract instead.




For the Glaze of the cake

3/4 cup of Confectioner's Sugar
1 1/2 Tablespoon of Water

Mix in a small bowl. Pour Glaze over cake.
