Living here in Savannah, Georgia, I have enjoy The Peanut Shop. To this day my favorite way to enjoy peanuts is peanut brittle. It is easy to make.
2 c sugar
1 c corn syrup, light
1/2 c water
1/2 tsp salt
3 c raw peanuts with skins
2 Tbsp butter
1 tsp vanilla
2 tsp Baking soda

Bring water, sugar and corn syrup to a rapid boil. Add peanuts and reduce heat to a medium. Stir often til the temperature hit 300 degrees.

Add the vanilla, butter and baking soda making sure you mix well.

Spreading on pre-buttered cookie sheets. This is a large batch, you will need two cookie sheets. Work quickly because it hardens fast.

After the brittle has cold break into little pieces.

Don't worry if you don't have a candy thermometer. You can use a cup of water to check if the candy in ready or not. I used this method often. I never know what happens to my thermometer.

I enjoy coating the broke pieces of brittle in chocolate. Yum chocolate!!! This is a good combination.
